We’re Not Hungry…Yet

Dear Mom and Dad,

If you read this post, please do not worry. We’re not actually hurting for money. You know how your daughter likes a challenge. Your grandkids will not go hungry, either, because they’ve stashed plenty of snacks in their room. Cosmic brownies and oatmeal pies, in case you were wondering.

Here’s a riddle for you. What do you get when you combine a bad back, several (out-of-pocket expensive) visits to the chiropractor, and an impending delivery of a side of beef? A PANTRY CHALLENGE! That is when you try to eat up everything in your freezer and pantry for a certain amount of time instead of making your regularly scheduled grocery trips. Taking on this challenge will check several boxes for me: 1. I cannot lift a grocery bag anyway (and my husband is working a TON of hours this week), 2. I’ve been trying to stick to a budget and have already given the chiropractor the rest of my grocery money (what can I say – I’m a giver), and 3. I always enjoy a new challenge (and right now the biggest challenge I’ve got going is trying to get dressed in the morning without hurting my back further – boring!) So, it seems like the perfect time to eat whatever is lurking in the corners of my house (I’m talking food, not spiders). I will still buy (ask my husband to bring home) milk and bananas, but I’m going to see how long I can go before needing to buy anything else. I know I can make it to the end of the month (5 days hardly counts as a challenge), but I’d like to go a week or two into the next month, if possible.

So here goes. This is what I’ve got planned for the next few days:

Tonight: Meatballs, mashed potatoes and gravy

Wednesday: Chicken bacon ranch soft tacos

Thursday: Hamburgers and fries

Friday: Teriyaki chicken drumsticks and salad

Saturday: BBQ pork ribs, grilled potatoes and salad

Sunday: Dinner @ church: Gram’s dip and hot fudge cake, Leftovers for supper

Monday: I’m not sure. We’re headed into uncharted waters here. I’ll post what I come up with.

There you have it, what April does when she’s stuck on the couch for a week, and can’t (or won’t) go grocery shopping. Feel free to comment, but PLEASE refrain from sharing any meal plans that are more interesting than mine. Joking!

  1. Pantry challenge? I thought it was “it’s the end of the month, and there’s 10 days left until you get paid again” challenge 🙂 However, I do have your 200 lbs. of beef waiting in my freezer. And I never thought of meatballs as on entree (duh). I’m doing that this week (with my beef, not yours). 🙂 <3
